out-of-scope nit: Do you know if we actually need @solana/webcrypto-ed25519-polyfill now that we use Node 24+ everywhere?

This PR updates the JS client to @solana/kit v8 and bumps the Kit plugin dev dependencies to their kit-v8-compatible versions.
