Refactors and centralizes the logic for hiding author information (pseudonymisation/anonymisation) across the codebase. It introduces a new
AuthorInfoReplacerclass to consistently handle replacing or hashing author fields, updates relevant processors and dataset export methods to use this class, and improves configuration and documentation for these features.
