docs: list the 2.x versions and refresh the generation notes

The version table stopped at 1.9.x, so 2.0.x, 2.1.x and 2.2.x were published but undiscoverable from the README. All three have specs and examples in the repo.

Also:

• The import example downloaded 2.0.x; it now uses 2.2.x, the current stable. The jq platform filter is unchanged, since 2.0.x and later all ship one document covering every platform.
• The generation section used 1.9.x in its command and implied specs are produced by hand. Reworded to say releases run the task through deployment automation, which is why the PRs here come from a bot.
• Added a note that each version is generated from the code that shipped it, so a document keeps the vendor extensions of its own release — x-appwrite.config appears from 2.2.x onwards, while earlier versions state the same binding with a ProjectPath security scheme.

Verified against the repo: examples/ has directories for 2.0.x, 2.1.x and 2.2.x, and specs/2.2.x holds open-api3-2.2.x.json. latest still has no examples, so its row keeps the dash.
