Introduce AI policy based on CoMaps policy

Low effort AI contributions are driving me nuts. It's no fun at all reading through a load of slop somebody couldn't even been bothered to write. Even if these contributions are valid bugfixes, I personally have zero interest in spending my time on them. Taking somebody's review feedback and pasting LLM output back into the thread with zero revision or judgement requires an intense disrespect of people's time and energy.

This policy is based on the CoMaps AI Policy, which in turn is based on a version of Forgejo's. Slight changes have been made for emphasis, and to add/remove parts relevant specifically to InfiniTime (e.g. CoMaps has a note about cherry picking commits in, which isn't particularly relevant to InfiniTime)

I'm not sure we'll move InfiniTime, but it's tempting. GitHub has some great features, but it's not going a direction I particularly love

This proposed AI policy fits very well with my own opinions:

• AI is a tool. You can use it to help with code, the same way you use an IDE with syntax highlighting, search features, and autocomplete. And, whatever tools you use, you are still accountable for the output of these tools.
• Open source contributions (commit messages, pull requests, reviews, feedback...) take place between human beings. Contributors, maintainers, and users collaborate to learn, have fun, and build great projects. AI/LLMs, bots, and agents have no place in such activities.

There's one thing I would like to add to this policy: I don't want our commit messages to become a free advertising platform for AI companies. In this context, I would like to ban all mentions of AI tools in commit messages, particularly tags like co-authored-by: . Such mentions do not provide useful information in the commit message, but effectively serve as free advertising for that company or tool. We might want to enforce and automate this with a new CI check that would block the PR if such mentions are detected in the commit messages.

Of course, according to the policy, we can discuss these tools in pull request descriptions if that makes sense.
