Problem
Contributors and users have no example configs to modify, making it hard to understand the expected YAML structure.
Proposed Change
Create at least two realistic sample merchant YAML files that demonstrate different product mixes and configurations. Include documentation on how to copy and edit them.
Acceptance Criteria
- At least 2 sample merchant config files included in the repo
- Samples exercise different product mixes (e.g., books vs digital goods)
- Samples load without code changes using the catalog loader
- README or docs explain how to copy and customize them
- Valid YAML that follows the schema
